Ingredients: Add ingredients to List

1 1/2 cups couscous
1 tablespoon olive oil
1 1/2 cups boiling water
1/4 cup plain yogurt
1/4 cup Ken's Lite Raspberry Walnut vinaigrette
1 teaspoon curry powder
1 1/2 teaspoon kosher salt
1/2 teaspoon Black pepper, freshly ground
1/2 cup diced pineapple
1/2 cup Fresh parsley, chopped
1/2 cup Ocean Spray Craisins, Pomegranate Flavor
1/4 cup Back To Nature Purely Nuts walnuts, coarsely chopped
2 each Scallions, thinly sliced
1/4 cup Red onion, diced finely

directions:

1. Place the couscous in a medium bowl. Add olive oil to boiling water and pour over couscous. Cover tightly, allow the couscous to soak for 5 minutes. Fluff with fork. Combine yogurt, vinaigrette, curry powder, salt and pepper in small bowl. Add to couscous in bowl and mix well. Add remaining ingredients to bowl, toss to coat.
