Springtime Salad with New Potatoes

Ingredients: Add ingredients to List

2 lbs new potatoes
4 cups mache (or spring mix, baby lettuce, or baby spinach leaves)
8 to 10 each new radishes, thinly sliced
1 each small English Cucumber, thinly sliced
1/4 cup Fresh chives, snipped into very small pieces
1/4 cup freshly squeezed lemon juice (Dressing)
1/4 teaspoon finely shredded lemon zest (Dressing)
1/4 cup extra-virgin olive oil (Dressing)
1 each small clove garlic, pressed (Dressing)
1 teaspoon thyme (Dressing)
1/2 teaspoon salt (Dressing)
1/4 teaspoon freshly ground black pepper (Dressing)

directions:

1. Lightly scrub potatoes and cut in half. Steam or boil for 15 to 20 minutes until easily pierced by tip of sharp knife. Drain and set aside to cool.
2. Wash and spin greens dry, then combine in a large salad bowl with radishes, cucumber, chives, and cooled potatoes. Toss gently to combine.
3. Whisk together all ingredients for dressing or place in a jar and shake to blend. Toss salad with dressing and serve immediately. Leftover dressing will keep in the refrigerator for up to a week. (Olive oil will solidify but will quickly become liquid again at room temperature.)
