Salmon Patties w/ Citrus Yogurt Dressing

2/3 cup low fat plain yogurt or nonfat Greek-style yogurt
1 teaspoon fresh lime juice
2 tablespoons orange juice
1 tablespoon honey
1 tablespoon minced fresh parsley
1 (14.8 oz.) can each pink salmon, drained
2/3 cup shredded carrot
2 each shallots diced
1/2 cup old-fashioned rolled oats
1 tablespoon dijon mustard
1/2 cup Chopped fresh parsley
2 teaspoons curry powder
1/4 teaspoon freshly ground black pepper
1 each egg
1 each egg white

directions:

1. Prepare the dressing. In a small bowl, mix together yogurt, lime juice, orange juice, honey, and 1 Tbsp. parsley. Set aside.
2. In a large bowl, flake salmon with a fork. Add carrot, shallots, oats, mustard, 1/2 cup parsley, curry powder, and pepper.
3. In a small bowl, lightly whisk together the whole egg and the egg white until just blended. Add to the salmon mixture and stir until ingredients are well combined and mixture is moist. Form into 6 patties.
4. When ready to cook, spray a nonstick skillet with vegetable cooking spray andheat over medium heat. Cook patties for 3 minutes or until lightly browned. Flipcarefully to avoid breaking, and cook for an additional 3 minutes. Place patties on a serving plate and top with yogurt dressing. Serve warm.
