Hearty Seafdood Stew

1/2 lb sea scallops
1 lb mussels
1 lb Large shrimp, peeled, deveined
2 tablespoons Olive oil
1 medium leeks, cut into 3/4-inch pieces
1/4 cup diced, fresh fennel
1/2 teaspoon orange zest
2 each Cloves garlic, minced
1/4 teaspoon salt
1 teaspoon Chopped fresh thyme
2 14.5 oz cans Hannaford brand Petite cut diced tomatoes
2 each (6 oz) bottles clam broth
2 lbs haddock fillet, cut into 2-inch chunks
2 tablespoons Chopped fresh parsley

directions:

1. Pull tough crescent shaped muscle from side of each scallop. Slice each scallop in half horizontally. Scrub mussels with stiff brush to remove any sand. Remove beards from mussels. Shell and devein shrimp.
2. In large stock pot or Dutch oven, heat 1 cup water to boiling over high heat. Add mussels; heat to boiling. Reduce heat to medium; cover and cook, stirring occasionally 5 minutes, just until shells open. Discard any mussels that do not open. With slotted spoon, remove mussels to a bowl.
3. Discard broth and any sand in bottom of Dutch oven. Wipe dry. Heat oil in Dutch oven over medium heat; add leeks,fennel, orange zest and garlic and cook until tender, about 5 minutes. Add salt, thyme, tomatoes with their juice, clam broth and 1 cup water; heat to boiling over high heat.
4. Add haddock, shrimp and scallops; heat to boiling . Reduce heat to medium-low and cook uncovered, 5-8 minutes until seafood is opaque throughout. Add mussels, heat through. Sprinkle with parsley. Serve with crusty bread.
