Cajun Shrimp and Sausage Gumbo
1/2 whole jalapeno pepper
1/8 teaspoon Extra virgin olive oil
2 oz Beef and pork pepperoni, slice
2 oz Skinless chicken thigh, broiler/fryer, raw
2 tablespoon Vegetable oil
2 tablespoon All purpose flour
1/8 each yellow onion
1/8 each Fresh medium sweet green bell peppers, 2 1/2"
1/4 each Fresh garlic cloves
141/2 oz Canned tomatoes, diced
1/4 teaspoon Oregano, ground
1/2 each Spice, bay, leaves, whole, dried, each
1/8 teaspoon Thyme, ground
1/8 teaspoon Fresh basil leaves, chopped
1/8 teaspoon Black pepper
3/4 teaspoon Cajun seasoning
11/2 cup Chicken bouillon/broth, 99% fat free
1/4 cup Short grain white rice, dry
1/2 cup Frozen okra slices with salt, drained
1 oz Small shrimp, raw
1 dash black pepper

directions:

1. Preheat oven to 450 degrees F.
2. Coat outside of peppers with olive oil; place on baking pan, roast until well blistered, turning occasionally, about 10 minutes; remove from oven and cool.
3. Remove skins, seeds, and vein from peppers; coarsely chop.
4. Cook sausage and chicken in large stock pot over medium heat until lightly browned, about 5 minutes; remove sausage and chicken from stock pot.
5. Add vegetable oil to stock pot; heat until hot.
6. Stir in flour while scraping bottom of pan with a wooden spoon; cook and stir until light brown, about 5 minutes.
7. Add jalapeqo pepper, onion, green pepper, garlic, and tomatoes; cook until vegetables are soft, about 5 minutes. Stir in oregano, bay leaves, thyme, basil, pepper, and Cajun seasoning.
8. Add broth, rice, sausage, and chicken and bring to a simmer; cover, venting slightly.
9. Simmer until rice is tender, about 20 to 25 minutes.
10. Stir in okra and shrimp; simmer 5 minutes.
11. Remove and discard bay leaves; season to taste with salt and pepper and additional Cajun seasoning if desired.
