Curried Quinoa Pilaf

Curried Quinoa Pilaf
2 teaspoon Olive oil
1/4 each Spanish onion, diced
1/2 each Medium red bell pepper, diced
1 1/2 each Fresh garlic cloves, peeled and crushed
1 teaspoon Ginger root, minced
1 teaspoon Curry powder
2 cup Small bunch kale, stalks discarded, thinly sliced
51/4 oz Bunch asparagus, woody stems removed
43/4 oz Canned diced tomatoes with juice
2/3 cup Quinoa, rinsed with cold water
1/4 teaspoon Kosher salt
1/8 teaspoon Black pepper, freshly ground
11/3 cup Water
8 teaspoon Fresh cilantro leaves, chopped

directions:

1. Place a large, heavy bottomed saucepan or soup pot over medium-high heat. When hot, add oil. Add onion, peppers, garlic, ginger root, and curry powder and cook until onion is soft and golden brown, about 10 minutes.
2. Add kale and cook until just wilted, about 3 minutes. Add asparagus, tomatoes, quinoa, salt, pepper, and water and bring just to a boil. Reduce heat to low, cover and cook until quinoa is tender, about 15 minutes. Serve immediately.
3. To serve, spoon into individual bowls and garnish with cilantro, if using.
