Chicken and Rice
3 piece(s) Chicken white meat, breast and wing, breaded and fried
1 teaspoon Low saturated fat vegetable oil
2 cup Water
1 each Fresh large red tomatoes, 3"
2 tablespoon Fresh sweet red bell peppers, chopped
1/4 cup green bell pepper
2 tablespoon Celery, fresh, diced
1/2 each Fresh large carrots, 7-8" long
2 tablespoon Frozen sweet white corn kernels
1/4 cup vidalia onion, chopped
2 tablespoon Fresh cilantro leaves
1 each Fresh garlic cloves
1/8 teaspoon Salt
1/8 teaspoon Black pepper
1 cup white long grain rice
1/4 cup Frozen green peas, 10 oz package
2 tablespoon Fresh natural California raisins, seedless

directions:

1. In large pot, brown chicken pieces in oil.
2. Add water, tomatoes, green and red peppers, celery, carrots, corn, onion, cilantro, garlic, salt, and pepper. Cover and cook over medium heat for 20-30 minutes or until chicken is done.
3. Remove chicken from pot and place in refrigerator. Add rice, peas, and olives to pot. Cover pot and cook on low heat for 20 minutes or until rice is done.
4. Add chicken and raisins, and cook another 8 minutes.
