Healthful North African Carrot Cake

Ingredients: Add ingredients to List

2 cup White whole wheat flour
2 teaspoon baking powder
1 1/2 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup flax meal
1 1/3 cup sugar
1/3 cup vegetable oil
2/3 cup fat-free plain yogurt
2 each eggs
2 cup Carrots, shredded
1 cup canned-in-juice crushed pineapple

directions:

Preheat oven to 350 degrees. Coat a 13 x 9-inch baking pan with cooking spray; set aside.
Combine flour and next 4 ingredients (through salt) in a large bowl, stirring with a whisk.
In a separate bowl, whisk together sugar, oil, yogurt, and eggs. Add to ?dry? ingredients. Fold in carrots and pineapple with juice.
Spoon batter into pan. Bake 40 - 45 minutes or until a wooden pick inserted in center comes out clean. Cool cake completely in pan on a wire rack.
