Oatmeal Chocolate Chip Cookies
11/2 cup All purpose flour
1 teaspoon Salt
1 teaspoon Baking Soda
1 cup Shortening, trans fat free
3/4 cup Light brown sugar packed
3/4 cup Sugar
2 each Large eggs
16 oz Organic chocolate morsels
2 cup Old fashioned oats
2 teaspoon Vanilla extract

directions:

1. Preheat oven to 350 degrees F.
2. Sift flour, salt and baking soda. Cream shortening and sugars; beat in eggs and vanilla until light and fluffy.
3. Stir in sifted dry ingredients, rolled oats and chocolate chips. Drop batter by rounded teaspoonfuls onto ungreased baking sheets.
4. Bake cookies in a preheated oven for about 10 to 12 minutes; cool on racks.
