Summer Seafood Salad
1/4 each Garlic cloves, crushed
1/8 each Fresh rib celery, cut into 1/2" pieces
23/4 oz Medium shrimp, raw, peeled and deveined
23/4 oz Small scallops, halved, raw
51/4 oz Blue mussels, raw
2 oz Cooked lobster
8 teaspoonHannaford Inspirations Mango Salsa vinaigrette
32 oz Hannaford Inspirations baguette, 2 loaves
2 teaspoon Fresh parsley, chopped
1/4 each Large carrots, peeled, diced small, 1/4 inch
2/3 cup Water
1/8 each Fresh small lemon, slices
21/4 oz Hannaford Inspirations Spring Mix

directions:

1. Combine carrots, celery, garlic and lemon in water. Bring to a boil over high heat. Reduce heat to medium; add shrimp, cover and cook 3 minutes. With slotted spoon, transfer shrimp to large bowl. Return liquid to boil; add scallops, cook 2 minutes, transfer with slotted spoon to bowl. Add scrubbed mussels to liquid and cook covered over high heat 2 minutes or until mussels open. Transfer to a plate to cool slightly. Remove mussels from shell, add to bowl with other fish.
2.Toss with dressing, add lobster meat and parsley. Cover and refrigerate 1 hour.
3. Arrange Spring Mix evenly on serving plates. Spoon seafood mixture over greens. Serve with toasted baguette slices and additional vinaigrette.
