Warm Orzo Salad
11/2 cup Orzo pasta, dry
2 tablespoon Olive oil, salad or cooking
1/2 each Fresh red onion
1 each Garlic clove, peeled
1 each Medium zucchini
2 each Fresh tomatoes
6 oz Feta cheese, crumbled
2 cup Hannaford Inspirations Baby Arugula
2/3 cup Hannaford Inspirations Balsamic Vinaigrette

directions:

1. Cook pasta according to package directions, drain. Heat oil in medium skillet over medium heat. Add onion, garlic and zucchini, cook stirring 2 minutes. Add tomatoes and arugula, cook 2 minutes more.
2. In large bowl, combine orzo, vegetable mixture and feta. Pour balsamic vinaigrette over pasta and toss gently. Serve with Hannaford Inspirations Neo Tuscan Boule. (Note: Hannaford Inspirations Neo Tuscan Boule is not included in the nutritional analysis.)
