Inside-Out Cheeseburgers with Spicy Ketchup

1 1/2 teaspoon Inspirations Northwoods Garlic Pepper Rub
1 1/2 lb Inspirations 90% lean Angus ground beef
2 slices reduced fat american cheese (or provolone) - about 1.5 oz., quartered
1/3 cup no-salt added ketchup
1/4 teaspoon cayenne
1/4 teaspoon ground chipotle chili pepper
1/4 teaspoon tabasco sauce or to taste
4 each whole-grain or whole-wheat hamburger bun
4 leaf Fresh large iceberg lettuce leaf
1/3 cup canned crispy fried onions, divided
1 each pickle slice (optional garnish)

directions:

1. Sprinkle rub over the beef and mix in a medium bowl just until blended. Divide seasoned beef into 8 even portions and form each into a thin 4-inch patty. Top half the patties with 2 cheese quarters, overlapping as needed so there is a small rim of burger around the cheese. Place the cheeseless patties on top and press patties together, sealing the cheese inside.
2. Heat a large nonstick skillet over medium-high heat. When hot, spray with vegetable cooking spray. Add patties to the pan. Cook until nicely browned, about 4 to 5 minutes, then flip. Cook an additional 4 to 5 minutes, so that the cheese in the center melts nicely. Alternately, cook on a preheated grill.
3. While patties cook, prepare the spicy ketchup. Mix ketchup, cayenne, chipotle, and Tabasco in a small bowl until evenly blended. Set aside.
4. To assemble the burgers, layer lettuce leaves on the bottom half of the burger rolls. Top with a patty, a generous Tbsp. spicy ketchup, a generous Tbsp. fried onions, pickle slices if using, and the roll top. Serve immediately.
