1. In a large bowl, mix chicken, Parmesan, breadcrumbs, egg, garlic, sun-dried tomatoes, basil, pepper, and salt until well combined. Form into four patties, about 4" in diameter.
2. Heat grill to medium-high, then set a large cast-iron skillet on grates. Heat oil in skillet until shimmering, then add patties. Cook until patties are golden brown and centers register 165 degrees, 6 to 8 minutes per side.
3. Top each with a slice of provolone and transfer to a clean plate. Toast buns cut side down on grill until golden, about 1 minute.
4. Microwave pizza sauce in a small bowl until hot, about 1 minute. To serve, place patties on buns and spoon sauce over top.
