1. Heat grill to medium-high, then clean and oil grates. Coat pork chops with 2 tablespoons dressing and season with salt and pepper. Set aside to marinate while grill heats.
2. Meanwhile, combine remaining 1/4 cup dressing and the water in a large bowl and whisk until blended. Add rice, spinach, cucumber, mango, onion, feta, and seasoning and toss to combine.
3. Place pork on grill and cook, flipping once, until browned and cooked through, 5 to 7 minutes per side. Transfer pork to a plate and cover loosely with foil. Let rest 5 minutes, then divide chops and rice among plates and serve.
