Jannine Honey Buttermilk Bee-Nana Bread

Ingredients

2 eggs
3/4 cup sugar
1/4 cup honey
1 cup mashed ripe bananas (2 to 3 medium bananas)
1 cup low-fat or nonfat buttermilk
1/2 cup chopped pecans
1 Tbsp. vegetable oil
2 Tbsp. unsalted butter, softened
1 Tbsp. vanilla extract
1 3/4 cup all-purpose flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Directions

1. Preheat oven to 325 degrees F. Spray a 9-by-5-inch loaf pan with vegetable cooking spray and set aside.
2. In a large bowl, use an electric mixer on medium speed to beat eggs with sugar and honey until thick and light, about 5 minutes. Stir in mashed bananas, buttermilk, pecans, oil, butter, and vanilla. Beat on medium speed until incorporated.
3. In a medium bowl, stir together flour, baking powder, baking soda, and salt. Add to the banana mixture and beat on low speed until just combined. Pour batter into prepared pan and bake for 55 to 60 minutes, or until a tester comes out clean. Cool in the pan 10 minutes, then turn out onto a rack to cool completely before slicing.
