Salmon Patties w/ Citrus Yogurt Dressing

Ingredients

2/3 cup plain low-fat plain yogurt or nonfat Greek-style yogurt
1 tsp. fresh lime juice
2 Tbsp. orange juice
1 Tbsp. honey
1 Tbsp. minced fresh parsley
1 (14.8 oz.) can pink salmon, drained
2/3 cup shredded carrot
2 shallots diced
1/2 cup old-fashioned rolled oats
1 Tbsp. dijon mustard
1/2 cup Chopped fresh parsley
2 tsp. curry powder
1/4 tsp. freshly ground black pepper
1 egg
1 egg white

Directions

1. Prepare the dressing. In a small bowl, mix together yogurt, lime juice, orange juice, honey, and 1 Tbsp. parsley. Set aside.
2. In a large bowl, flake salmon with a fork. Add carrot, shallots, oats, mustard, 1/2 cup parsley, curry powder, and pepper.
3. In a small bowl, lightly whisk together the whole egg and the egg white until just blended. Add to the salmon mixture and stir until ingredients are well combined and mixture is moist. Form into 6 patties.
4. When ready to cook, spray a nonstick skillet with vegetable cooking spray and heat over medium heat. Cook patties for 3 minutes or until lightly browned. Flip carefully to avoid breaking, and cook for an additional 3 minutes. Place patties on a serving plate and top with yogurt dressing. Serve warm.
