Amazing Butternut Squash Puree

Ingredients

20 oz Butternut squash, peeled, seeded, cut into chunks
1/2 cup coconut milk
2 tablespoon curry powder
2 tablespoon canola oil
1/4 teaspoon salt
1 pinch ground black pepper
Amazing Butternut Squash Puree

Directions

1. Steam the butternut squash until tender.
2. Place squash in food processor. Add coconut milk, curry powder, oil, salt and pepper and blend until smooth.
Alternative: blend with 1/2 cup of the steaming liquid, 2 tablespoons olive oil, 1 tablespoon minced fresh ginger and salt and pepper.
