Pork Medallions with Thai Curry Sauce

Ingredients

1 lb Pork tenderloin, sliced into 1/2 inch thick rounds
1 pinch salt
1 dash ground black pepper
2 tablespoon olive oil
1/2 jar Taste of Inspirations Thai Curry Simmer Sauce
Pork Medallions with Thai Curry Sauce

Directions

1. Season each round with a pinch of salt and a dash of pepper.
2. Heat oil in a large pan to medium heat. Add pork rounds and brown each side, about 3 minutes each side.
3. Pour Thai Curry Sauce over pork, cover and reduce heat to Simmer, about 6 minutes or until cooked through.
