Rainbow Salad

Ingredients

1 each red pepper, diced
3 each carrots, peeled and diced
1 large cucumber, diced
1 each small purple onion, small dice
2 cups purple cabbage, chopped
2 tablespoons rice vinegar (or white balsamic vinegar)
1/4 cup Olive oil
1 tablespoon honey
1 each Cloves garlic, minced
1/2 teaspoon salt
1 dash ground black pepper
Rainbow Salad

Directions

1. Combine first six ingredients in a bowl.
2. Combine the rest of the ingredients in a small bowl and whisk until well blended to make dressing. (Or shake well in a small clean jelly jar).
3. Pour dressing over salad, toss and serve.
