Simple Crock Pot Beef Barley Soup

1 lb lean beef stew meat, cut into 1/2 inch cubes
1/2 each onion, chopped
2 each carrots, chopped
2 stalks celery, chopped
1 cup barley
2 qts low-sodium chicken broth
1 each bay leaf
2 teaspoons thyme (dried)
1/2 teaspoon salt ( or to taste)
1/2 teaspoon black pepper (or to taste)
1 (12 oz.) bag Frozen mixed vegetables
Simple Crock Pot Beef Barley Soup


1. Preheat broiler to high. Place stew beef on a baking sheet and spray with olive oil spray. Place under broiler to brown beef cubes on each side (turning after 3 minutes).
2. Combine all of the ingredients (except frozen mixed vegetables) in a crock pot and cook on low setting for 8 hours. Add one bag mixed frozen vegetables during last 15 minutes of cooking.
