Winter Orange & Wild Rice Salad

1 each orange, zest, juice and pieces
2 tablespoon olive oil
1/4 cup Chopped fresh parsley
1 pkg Uncle Ben's whole grain quick-cooking wild rice blend
1/4 cup Red onion, diced
Winter Orange & Wild Rice Salad


1. Cook rice according to package.
2. Zest the orange and set aside. Peel the rest of the orange including the pith and discard. Cut the orange into quarters, juice one quarter and cut the rest into pieces.
3. Whisk orange juice, olive oil, and parsley. Combine all ingredients and toss.
