Brian Daddio's Chili

Ingredients

1/4 cup olive oil
2 lbs. London broil, cubed
1 lb. Italian hot sausage
5 jalapeno peppers, seeded and chopped
6 (14.5 oz.) cans Hunt's Fire-Roasted Diced Tomatoes
4 (15 oz.) cans Bush's Best Black Beans
2 (7 oz.) cans chipotle peppers in adobo sauce, finely chopped
1/2 tsp. sugar
1/2 tsp. dried basil
1 tsp. ground cumin
2 (12 to 16 oz.) jars roasted red peppers, drained and chopped
sour cream or plain Greek yogurt (optional garnish)

Directions

1. In a 12-quart pot, heat oil over medium-high heat. Add London broil and brown on all sides, about 3 minutes. Add sausage and saute until cooked through and crumbly. Add jalapenos and saute until softened slightly, about 2 minutes.
2. Add tomatoes, beans, chipotles with all the adobo sauce, sugar, basil, cumin, and roasted peppers. Stir well. Cook over medium heat, uncovered, for about 1 hour, stirring frequently. Serve in bowls, garnished with sour cream or yogurt if desired.
