Honey Pecan Raised Waffles

Ingredients

1/4 cup warm water
1 (1/4 oz.) pkg. active dry yeast (not instant)
1/2 cup vegetable oil
1 egg
1 Tbsp. honey, plus additional for optional topping
1 Tbsp. sugar
2 cups lukewarm milk
3 cups all-purpose flour
1/4 tsp. salt
1/2 cup chopped pecans, plus additional for optional topping
whipped butter (optional)
Honey Pecan Raised Waffles

Directions

1. Place water in a small bowl and sprinkle with yeast; stir to combine. Let sit 1 to 3 minutes for the yeast to proof - it should foam up a little. Transfer to a large bowl and whisk in oil, egg, honey, sugar, and milk and stir to mix well. Stir in flour and salt, then pecans. Cover with plastic wrap and refrigerate for 8 hours or overnight.
2. The next morning, heat a waffle iron, spray with vegetable cooking spray, and cook according to the manufacturer's instructions.
3. Keep waffles warm in a 200 degrees F oven while you prepare the entire batch. If desired, serve with whipped butter, honey, and additional pecans.
