Breakfast Oatmeal Bake

Ingredients

2 cups old-fashioned oats
1/3 cup dark brown sugar, packed
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 tsp. salt
1/2 cup blueberries, fresh or frozen (don't thaw)
1/2 cup raspberries, fresh or frozen (don't thaw)
1/2 cup semisweet chocolate chips
1/4 cup creamy peanut butter
3 Tbsp. unsalted butter, melted
2 cups milk
1 egg
1 tsp. vanilla extract

Directions

1. Preheat oven to 375 degrees F. Spray a 9-by-13-inch pan with vegetable cooking spray.
2. In a large bowl, mix together oats, brown sugar, baking powder, cinnamon, nutmeg, and salt. Stir in blueberries, raspberries, and chocolate chips.
3. In a medium bowl, stir together peanut butter and melted butter; then whisk in milk, egg, and vanilla. Pour into the oatmeal mixture and stir to combine well.
4. Transfer to prepared pan, spreading mixture to the edges. Bake until lightly brown on top, about 30 to 40 minutes. Serve warm.
