Kale with Sesame Sauce

Ingredients

1 Tbs. sesame seeds
1 lb. kale, stems removed and discarded, leaves cut into bite-size pieces
3 Tbsp. soy sauce
2 Tbsp. toasted sesame oil
1 clove garlic, mashed
1 Tbsp. sugar
1 Tbsp. cider vinegar
Kale with Sesame Sauce

Directions

1. In a small skillet, cook sesame seeds over medium heat until toasted, about 2 to 3 minutes. Immediately transfer to a plate to cool.
2. Steam kale in a large pot over medium heat until just tender, about 10 minutes. Drain and squeeze out water.
3. While kale steams, prepare sauce. In a large bowl, whisk together soy sauce, sesame oil, garlic, sugar, and vinegar until sugar dissolves. When kale is ready, add to bowl and toss with the sauce. Serve warm, room temperature, or chilled. May be frozen and may be halved.
