Spicy Cocktail Meatballs with Cheesy Toasts

Ingredients

You can substitute lean ground beef or pork for the turkey in this recipe. Serve with toothpicks.
1/2 cup breadcrumbs
1 large egg, lightly beaten
1/4 cup minced roasted red pepper
1 lb. ground turkey
3 oz. Manchego or Parmesan cheese, shredded (1 cup)
1/2 cup minced fresh basil
1 garlic clove, minced
1 tsp. salt
1 Tbsp. olive oil
1 jar Taste of Inspirations Arrabbiata Pasta Sauce
1 (8-oz.) baguette, cut into 1/2"-thick slices
Spicy Cocktail Meatballs with Cheesy Toasts

Directions

1. Stir together breadcrumbs, egg, and red pepper in a medium bowl until a paste forms. Mix in turkey, 1/4 cup cheese, 1/4 cup basil, garlic, and salt. Using a tablespoon, portion and shape mixture into meatballs.
2. Heat oil in a large nonstick skillet over medium-high heat until shimmering. Add meatballs and brown all over, about 10 minutes. Reduce heat to medium and stir in sauce. Cover and simmer until meatballs are cooked through, 8 to 10 minutes.
3. Meanwhile, place a rack in the uppermost part of oven. Arrange bread slices on a baking sheet, top evenly with remaining 3/4 cup cheese, and broil until golden brown, about 2 minutes.
4. Transfer meatballs and sauce to a serving bowl, top with remaining 1/4 cup basil, and serve with toasts.
