Greek Tomato Sandwich

Ingredients

1/4 cup chopped Kalamata olives
1/4 cup goat cheese, softened
8 slices sandwich bread
1 tomato, sliced thin
1/2 cup baby spinach
Greek Tomato Sandwich

Directions

1. Stir together olives and goat cheese until combined. Spread over 4 bread slices and add a layer each of tomato slices and baby spinach; top with 4 more bread slices.
