Avocado "Pesto" Sandwich

Ingredients

1 avocado, peeled and pitted
1/4 cup chopped fresh basil
1/4 cup pine nuts, toasted
1/4 cup lemon juice
Salt
8 slices sandwich bread
1/2 cucumber, sliced thin
1/2 cup watercress
Avocado "Pesto" Sandwich

Directions

1. Mash avocado with basil, pine nuts, and lemon juice and season with salt to taste. Spread over 4 bread slices and add a layer each of thinly sliced cucumber and watercress; top with 4 more bread slices.
