Carrot, Blueberry, and Avocado Grain Bowl

Ingredients

1 Tbsp. lemon juice
1 tsp. olive oil
1 tsp. Dijon mustard
3/4 cup cooked quinoa
1 carrot, peeled and shredded coarse
1/4 avocado, sliced
1/4 cup blueberries
2 tsp. roasted sunflower seeds

Directions

1. In a small bowl, whisk lemon juice, olive oil, and mustard until smooth. In a serving bowl, mix together quinoa and carrots. Top with avocado slices, blueberries, and sunflower seeds. Drizzle with lemon mixture before serving.
