Mushroom, Kale, and Pesto Grain Bowl

Ingredients

1 Tbsp. plain Greek yogurt
1 Tbsp. pesto
1 Tbsp. water
3/4 cup cooked quinoa
1/2 cup finely shredded kale
1/4 cup chopped marinated mushrooms
1/4 cup halved cherry tomatoes

Directions

1. In a small bowl, whisk yogurt, pesto, and water until smooth. In a serving bowl, mix together quinoa and kale. Top with mushrooms and tomatoes. Drizzle yogurt mixture over bowl before eating.
