Polenta Croutons

Ingredients

1/2 tube precooked polenta (about 9 oz.), cut into 1/2" cubes
1 Tbsp. olive oil
1 Tbsp. Parmesan
1 Tbsp. chopped fresh parsley
Salt and pepper
Polenta Croutons

Directions

1. Heat oven to 425 degrees. On a parchment-lined baking sheet, toss polenta with oil, cheese, and parsley and season with salt and pepper to taste.
2. Bake until golden brown and crisp, flipping halfway through, about 30 minutes.
