Green Goddess Dressing

Ingredients

Creamy green goddess dressing is perfect for drizzling over a healthy grain bowl, or use as a dip for veggies.
8 oz. silken tofu
2 Tbsp. water
1/2 tsp. zest and 2 Tbsp. juice from 1 lemon
1/4 cup fresh parsley leaves
1/4 cup fresh cilantro leaves
2 scallions, roughly chopped
1 Tbsp. vegetable oil
1/4 tsp. garlic powder
Salt and pepper

Directions

1. Combine all ingredients in blender and puree until smooth. Season with salt and pepper to taste, transfer to a jar, and refrigerate for up to 5 days.
