Garlic Mashed Potatoes

Ingredients

2 1/2 lb. white potatoes, scrubbed
1/4 cup milk
3 Tbsp. unsalted butter
1 cup shredded extra-sharp cheddar cheese
1 cup grated Parmesan cheese
1/2 cup garlic-and-herb cheese spread (such as Alouette)
8 scallions, sliced
Salt and pepper

Directions

1. Heat oven to 350 degrees.
2. Place potatoes in a large saucepan and add enough water to cover by 1". Bring to a simmer and cook until tender, 15 to 20 minutes. Drain and return to saucepan. Add milk and butter and, using an electric mixer or a potato masher, mash potatoes until mostly smooth.
3. Add 1 cup cheddar cheese, Parmesan cheese, garlic-and-herb cheese spread, and scallions and mix until just combined. Season with salt and pepper to taste, transfer to a greased 8 1/2x11" baking dish, and cover tightly with foil.
4. Bake until potatoes are hot, about 30 minutes. Remove foil and sprinkle remaining 1/2 cup cheddar over top. Return potatoes to oven and broil until cheese is melted and begins to brown, 3 to 5 minutes.
