Red Cabbage and Jicama Slaw

Ingredients

1 lb. red cabbage, cored and finely shredded
1/2 jicama root, peeled and cut into thin matchsticks
Salt and pepper
Pinch sugar
1/2 cup buttermilk
3 Tbsp. mayonnaise
1 Tbsp. lime juice
1/4 tsp. ground cumin
4 scallions, sliced thin
Red Cabbage and Jicama Slaw

Directions

1. Transfer cabbage and jicama to a colander set over a bowl. Toss with a big pinch each of salt and sugar and drain for 15 minutes.
2. Meanwhile, in a large bowl, whisk buttermilk, mayonnaise, lime juice, and cumin. Add vegetables and scallions and toss to combine. Season with salt and pepper to taste and serve.
