Olive Oil Brownies with White Chocolate Chips and Sea Salt

Ingredients

This recipe was adapted for fresh from Krista Kern Desjarlais, owner of The Purple House in North Yarmouth, Maine.
1 cup all-purpose flour
3/4 tsp. kosher salt
1/4 tsp. baking powder
1/3 cup boiling water
1/3 cup unsweetened Dutch-process cocoa powder
1/2 cup plus 1 Tbsp. extra-virgin olive oil
4 oz. unsweetened chocolate, melted
1 large egg, room temperature
1 Tbsp. vanilla extract
3/4 cup packed dark brown sugar
1/3 cup granulated sugar
1/2 cup white chocolate chips
1/4 cup bittersweet chocolate chips
Flaky sea salt, for garnish

Directions

1. Center a rack in oven and heat to 350 degrees. Grease an 8" square baking pan and line with parchment paper.
2. Whisk flour, salt, and baking powder in a medium bowl and set aside. In a large bowl, whisk boiling water and cocoa powder until smooth. Add olive oil, melted chocolate, egg, and vanilla and whisk until smooth.
3. Whisk brown and granulated sugars into wet ingredients, then fold in flour mixture and chocolate chips. Transfer batter to prepared pan and spread into an even layer. Sprinkle evenly with a heavy pinch of sea salt.
4. Bake until brownies are set and firm to the touch, 20 to 25 minutes. Transfer pan to a wire rack and let cool completely, about 1 hour. Cut into 9 squares.
