Ingredients

Low-fat cottage cheese provides the foundation of a creamy pasta sauce that won't break the caloric bank. Roasted red peppers, whether jarred or home-made, bring wonderful flavor and a heap of vegetable. Mix up the options by adding in chopped tomatoes, chopped chicken breast, or a can of white beans.
12 oz. spinach, washed
12 oz. penne pasta
1 garlic clove, minced
1 cup low-fat cottage cheese
1/4 cup milk
1/4 cup Parmesan cheese
1 tsp. basil
1/2 tsp. salt
1/4 tsp. pepper
1 (12 oz.) jar roasted red peppers, drained and chopped
Creamy Spinach Penne

Directions

1. Bring a large pot of water to a boil. Add spinach and cook briefly to blanch (30 seconds). Drain spinach and run under cold water to cool quickly.
2. Cook pasta according to package directions.
3. While pasta cooks, puree together spinach, garlic, cottage cheese, milk in a food processor or blender until smooth. Stir in Parmesan cheese, basil, salt, and pepper.
4. Toss warm pasta with sauce and red peppers to serve.
