Ingredients

Brochettes is another word for kebab, referring to the skewer itself, deriving from the French for "to spit." These brochettes are a Middle Eastern-inspired dish which will quickly become a grilling favorite in your recipe repertoire. Couscous provides a fluffy and absorbent bed that will soak up the wonderful flavors.

Directions

1. Cook couscous according to package directions.
2. Combine seasoning ingredients in large bowl. Toss with beef, onion, and bell pepper to coat.
3. Thread beef and vegetable pieces onto skewers (brochettes).
4. Place brochettes on rack in broiler pan with the oven rack in the highest position. Broil on high for medium-rare to medium doneness, turning once (8-10 minutes). Season with salt.
5. Place brochettes on top of couscous and sprinkle with cilantro to serve.
