Ingredients

If you're cooking fresh corn, cook a few extra ears and chill them overnight to make this easy seasonal salad. Eat it as it's own dish or as a topping for any basic meat dish.
4 ears corn, cooked
1 Tbsp. olive oil
1 Tbsp. red wine vinegar
3 tomatoes, chopped
1 Tbsp. Parmesan cheese
1 Tbsp. chopped fresh parsley

Directions

1. Cut kernels off cobs. Mix all ingredients together.
2. Chill until ready to serve.
