Classic Meatloaf

Ingredients

This meatloaf tastes just like your mother used to make it, but with lean meat, egg substitute and oats to bind the mixture and keep it moist, this version is a whole lot healthier. If you like more veggies in your meatloaf, feel free to add more of your favorites to the mix.
7 Tbsp. ketchup, divided
1 Tbsp. Worcestershire sauce
1 cup quick-cooking oats
1/2 cup minced onion
2 Tbsp. parsley
1 Tbsp. basil
1/4 tsp. salt
1/2 tsp. pepper
1 lb. 90% lean ground beef
1/2 c. egg substitute
2 cloves garlic, minced
1 bell pepper, chopped
Classic Meatloaf

Directions

1. Preheat oven to 375 degrees F. Coat a 9"x5" loaf pan with cooking spray.
2. Combine 4 tablespoons of ketchup and all other ingredients in a large bowl. Stir until well blended.
3. Pat mixture into loaf pan and top with remaining 3 tablespoons ketchup. Bake to a minimum internal temperature of 160 degrees F (1 hour).
4. Remove from oven and let stand to finish cooking (10 minutes). Serve in slices.
