Sweet Potatoes with Black Bean Salsa

Ingredients

Baked sweet potatoes are a delicious treat on their own...why not turn them into a meal with the help of a delicious black bean salsa?
4 sweet potatoes
1 (15 oz.) can black beans, rinsed
2 tomatoes, diced
1 Tbsp. olive oil
1 tsp. cumin
1 tsp. coriander
1/2 tsp. salt
1/4 cup reduced-fat sour cream
1/4 cup chopped fresh cilantro
Sweet Potatoes with Black Bean Salsa

Directions

1. Preheat oven to 425 degrees F. Pierce sweet potatoes and bake until tender (1 hour).
2. Combine beans, tomatoes, oil, cumin, coriander, and salt in a small saucepan. Heat through.
3. Slash each sweet potato lengthwise, press open to make a well in the center, and spoon the bean mixture into the well. Top each with a dollop of sour cream and a sprinkle of cilantro.
