Grilled Peach Salsa

Nothing compares to the bright, sweet-tart, lip-smacking combination of fresh fruit, jalapeno, lime juice and cilantro and mint. Make a double batch and invite your friends. Slather it on your fish, your burgers, and your baked potatoes.
1 1/4 lbs. peaches (about 4), halved
1 tsp. canola oil
2 Tbsp. finely chopped onion
1 jalapeño, seeded and chopped
Zest and juice of 1 lime
1/4 cup chopped fresh cilantro
2 Tbsp. chopped fresh mint
Grilled Peach Salsa


1. Preheat grill to medium. Brush cut sides of peaches with oil. Grill the peaches until softened and browned in spots (3-5 minutes per side). Let cool.
2. Cube the peaches and place in a medium bowl. Stir together with onion, jalapeño, lime zest and juice, cilantro and mint.
