Ingredients

This healthy makeover of a well-loved comfort food is a recipe worth having in your rotation. Using spices, herbs, and zest to punch up the flavor, this recipe will be requested by your family time and again.
1/4 cup onion, chopped
1/2 cup chopped bell pepper
1 lb. 95% lean ground beef
1/2 cup tomato paste
1 cup chopped tomatoes
1/2 tsp. mustard
1/4 tsp. pepper
1/2 tsp. chopped chili pepper
2 cloves garlic, chopped
2 scallions, chopped
1/2 tsp. ginger
1/8 tsp. nutmeg
1 tsp. orange zest
1/2 tsp. thyme
1/4 cup oatmeal

Directions

1. Preheat oven to 350 degrees F.
2. Coat a skillet with cooking spray and saute onion and pepper until soft (3-5 minutes).
3. Mix all ingredients together thoroughly.
4. Place in 1 lb. loaf pan and baked, covered, until it reaches a minimum internal temperature of 165 degrees F (50 minutes).
5. Uncover pan and continue baking until crisp on top (12 minutes).
