Ingredients

Fresh herbs, onions, and garlic boost the flavor of this quick-cooking grain that also serves as a complete protein.
1 onion, peeled and chopped
1/2 cup chopped cilantro
1/2 cup chopped parsley
4 cloves garlic
1/2 tsp. salt
1/4 tsp. pepper
3 cups water
2 cups quinoa

Directions

1. Puree onion, cilantro, parsley, garlic, salt, pepper, and water in blender or food processor.
2. Transfer to a medium saucepan and bring to boil over high heat. Add quinoa, stir to combine, and reduce to heat to simmer. Cover saucepan and cook until quinoa is tender (20 minutes).
