Spanish Cauliflower

Ingredients

Cauliflower cooked with tomatoes, onion, and simple spices is a humble-yet-delicious side dish that's perfect to pair with any simple entree.
1 head cauliflower, chopped into 2" pieces
1 Tbsp. olive oil
1 onion, chopped
1/4 tsp. garlic powder
2 large tomatoes, chopped
1/2 tsp. pepper
1 Tbsp. parsley
1/4 cup grated Parmesan cheese

Directions

1. Cover cauliflower with 1" of water in a saucepan and bring to a boil over medium heat. Cook until just tender (3-5 minutes). Drain.
2. Heat oil in a large skillet over medium heat. Add onion and cook until tender (3-5 minutes).
3. Add the garlic powder and cooked cauliflower to skillet. Stir until browned (2-3 minutes). Stir in the tomatoes and black pepper and cook until heated through (4-5 minutes).
4. Sprinkle with parsley and cheese to serve.
