Fresh Asparagus Frittata

Ingredients

While asparagus is fresh and in-season, there's no better vegetable. If you get carried away with your asparagus purchases the way we do, a frittata is a simple and delicious way to enjoy asparagus at its best.Tip: If you choose to use leftover asparagus that's already cooked, add the asparagus to the pan with the eggs instead of the onion.
1 1/2 cups egg substitute
1/4 cup skim milk
1/4 tsp. garlic salt
1 cup chopped asparagus
1/2 cup shredded, reduced-fat Swiss cheese
1/2 cup chopped onion
1/2 cup chopped bell pepper
Fresh Asparagus Frittata

Directions

1. In a large bowl, combine egg substitute, milk, garlic salt, asparagus, and cheese. Mix well.
2. Spray 10" skillet with cooking spray and heat over medium. Saute onion, pepper, and asparagus until tender (5-8 minutes).
3. Reduce heat to low and pour egg mixture into skillet. Cover and cook until set (15-20 minutes).
4. Cut into slices to serve.
