Simple Roasted Fingerlings

Roasting is a wonderful way to bring out the best natural flavors of this root vegetable...condiments not required.
1 Tbsp. olive oil
1 1/2 lbs. fingerling potatoes, halved
1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. ground red pepper
Simple Roasted Fingerlings

Directions

1. Preheat oven to 400 degrees F.
2. Toss all ingredients together and spread out on a baking sheet.
3. Roast until tender (25-30 minutes). Serve hot.
