Summer Pea, Watermelon & Farro Salad

Ingredients

1 cup farro
1 cup peas
1/2 tsp. salt
1/4 tsp. pepper
1 cup cubed watermelon
1 cup chopped fresh parsley
1/4 cup shaved Pecorino Romano cheese

Directions

1. Cook farro according to package directions. In the last 2 minutes of cooking, add peas. Drain and rinseĀ  with cold water.
2. Combine farro mixture with remaining ingredients, except cheese, and toss well to combine.
3. Garnish with cheese to serve.
