Ingredients

Nutritious breakfast cookie recipes can be hit or miss on the flavor front. This one is simple and tastes mildly of bran. It's a very flexible base to work with. Add in chopped apples or ripe pears for little bites of flavor. Make it more of a meal by adding a few tablespoons of chopped nuts. For a special treat, add a few tablespoons of dark chocolate chips.
2 1/2 ripe bananas
1/2 cup chopped dates
1/2 cup flax seeds
1/2 cup oat bran
1 1/2 cups whole wheat flour
1 cup soy milk
1 tsp. baking soda
1/2 Tbsp. salt
Easy Banana Bran Breakfast Cookies

Directions

1. Preheat oven to 350 degrees F.
2. Mash bananas together with flax seed in mixing bowl. Stir in all other ingredients and mold the mixture into 8 cookies. Place on a nonstick baking sheet. Bake until firm to the touch (30-35 minutes).
