Roasted Curried Chickpeas

Ingredients

Add some zing and crunch to your salad or snack routine with this simple dish. Don't be afraid to play with the spice mix! Taste it before you add it to the beans and tailor it to your preferences.
2 (15 oz.) cans chickpeas
3 Tbsp. olive oil
2 tsp. paprika
1/2 tsp. cumin
1/2 tsp. curry powder
3/4 tsp. salt
1 Tbsp. lemon zest
1 tsp. chopped fresh rosemary
1 tsp. chopped fresh thyme
Roasted Curried Chickpeas

Directions

1. Preheat oven to 425 degrees F.
2. Roast chickpeas until golden and crisp, stirring once (20 minutes).
3. While the chickpeas are roasting, combine remaining ingredients. Pour the mix over the pan of chickpeas and stir to coat. Return pan to oven to let flavors set (3-4 minutes).
4. Cool until safe to eat before serving (2-3 minutes).
