Black Bean & Quinoa Burger

Ingredients

Vegetarians rejoice! These are one of the best meatless burgers we've tried yet, and they're only half an hour away.Tip: Make this recipe with leftover, chilled quinoa for the firmest texture.
1 (15.5 oz.) can low-sodium black beans, drained and rinsed
1/2 cup cooked quinoa
1/2 tsp. cumin
1/2 tsp. pepper
1/2 tsp. paprika
1/4 tsp. salt
1 Tbsp. nutritional yeast
1/2 tsp. dijon mustard
1 Tbsp. olive oil
4 whole-grain buns
Black Bean & Quinoa Burger

Directions

1. Preheat oven to 400 degrees F.
2. Mash all ingredients except oil together. Divide the mixture into four equal balls, and form each into a patty.
3. Heat oil in a medium, oven-proof skillet over high heat and cook the patties until lightly browned (1 minute per side).
4. Transfer skillet to oven and bake until firm (15 minutes). Serve patties on buns, topped with fresh veggies as desired.
